What belongs to which allergen?
Some ingredients are exempt, such as wheat-based glucose syrups or fully refined soya oil. The full list is in Annex II of Regulation 1169/2011 (in the UK, the retained version).
- Cereals containing gluten
- Wheat (such as spelt and khorasan wheat), rye, barley, oats and products made from them
- Crustaceans
- For example prawns, crab, lobster and products made from them
- Eggs
- Eggs and products made from them
- Fish
- Fish and products made from it
- Peanuts
- Peanuts and products made from them
- Soya
- Soybeans and products made from them
- Milk
- Milk and products made from it, including lactose
- Nuts (tree nuts)

Allergen information sheet: UK and Ireland in short
Your guests must be able to find out the allergens in every dish before they order. A written allergen chart is one of the allowed ways. Here's how it works in each country.
GBUnited Kingdom
Any way works: on the menu, on a chart or verbally. If staff tell guests, a notice, the menu or a label where guests choose their food must say they can ask staff for the details. Name the allergens as in the list (Food Information Regulations 2014, reg. 5, England; same rule in Wales, Scotland and Northern Ireland). The FSA also recommends having them in writing (guidance).
IEIreland
Always in writing, where the food is presented or sold, before the sale. Easy to find, clearly written, at least in English and with no doubt which dish an allergen belongs to. A verbal answer alone isn't enough (S.I. 489/2014).

What goes in an allergen matrix?
Every dish and drink you sell unwrapped, and which of the 14 allergens are in it: cereals containing gluten, crustaceans, eggs, fish, peanuts, soya, milk, tree nuts, celery, mustard, sesame, sulphites, lupin and molluscs. Plus the date you last checked it.
Is an allergen chart enough?
A written chart is an allowed way in the UK and in Ireland, as long as guests can easily find it before they order. In Ireland, it must be in a clear place where the food is presented or sold, clearly written and at least in English. Details are in the guide.
Is a verbal answer enough?
In the UK, yes – if a notice, the menu or a label where guests choose their food says they can ask staff. The tool prints that notice for you. The FSA also recommends having the allergens in writing (guidance). In Ireland, no: the allergens must always be in writing where guests can see them.
Can I save the allergen matrix as a PDF?
Yes. Tap “Print or save as PDF” and in the print window choose “Save as PDF” instead of your printer. The table is in landscape, so all 14 allergens fit side by side.
Is there a blank template to fill in by hand?
Yes. Choose “Blank template” in the tool. You get an allergen chart with all 14 allergens and empty rows to fill in by hand.
Where is my data saved?
Only in your browser on this device. Nothing is uploaded and you don't need an account. When you come back, your list is still there – until you clear it or delete your browser data. You won't see it on another device, so save it as a PDF for that.
Does momoscreen have an allergen field?
