Hygiene lists (food safety)
Food temperature log and cleaning checklist on your phone – instead of paper on the fridge.
You check your fridges in the morning, type the reading into your phone and tick off the cleaning. If a reading is too warm, the app asks what you did. When the health inspector comes, you download any month as a PDF: proof of your self-checks.
Free · No sensors, no tablet needed · In the same app as your menu
A morning in the kitchen: the fridge shows 48 °F. It's only saved with an action.
The problem
The sheet on the fridge door
You know it: a list filled in with a ballpoint pen, stuck to the door with a magnet. It works until the first days go missing or the sheet gets wet and greasy.
Set up
Set it up once, then it runs
You don't need a form or a template. The app asks you what it needs and has already filled in the rest.
Cleaning checklist
Clean, tap, done
The cleaning checklist sits right under the temperatures. Whoever finishes a task taps it. Name and time are added automatically, so nobody has to scribble initials.
These suggestions are already ticked
Remove or rewrite what doesn't fit. Add your own tasks too, for example “Descale the coffee machine”.
Every day
- Clean and sanitize work surfaces
- Mop the kitchen floor
- Clean the sink and dishwasher
- Clean cutting boards and knives
- Empty and clean the trash cans
Once a week
- Clean the inside of the fridges
- Clean the extractor hood and filters
- Check and tidy the storeroom
You tick off weekly tasks once a week, on the day they're done.
The month at a glance
You see gaps the next morning
Tap the day at the top, and a calendar shows every day in color. Green: all done. Red: something was too warm. Orange: something is missing. Gray: closed.
- Orange means: a reading is missing or a cleaning task isn't ticked off. You see it the next morning, not at the end of the month.
- Red means: a reading was too warm. What you did about it is in the history and in the PDF.
- Gray happens on its own: the app takes closed days from your opening hours and closed days.
Monthly PDF
The PDF for the inspection
Under “History”, you pick the month and download it as a PDF. Show it on your phone or print it. No binder, no searching.
- For each cooling unit, every day with reading, time, initials and result
- The cleaning as a grid: who did which task and when
- Every deviation with its action and name
- Real text, not a photo: easy to read and to search
- All entries are kept for 2 years
Team
Everyone logs on their own phone
Each person signs in with their own login and gets only the access they need. The hygiene lists have two permissions of their own. How to invite someone is on our page about staff accounts and permissions for restaurants.
Log hygiene
- Log temperatures
- Tick off cleaning
- See the history
Not included: setting up units and tasks, downloading the PDF and changing other people's entries.
Manage hygiene
- Set up cooling units and tasks
- Download the PDF for the inspection
- Change and delete all entries
Includes everything in “Log hygiene”. Only the owner and people with “May do everything” can switch the lists on and off. Every change and deletion is recorded in the settings under “Changes”.
Every entry shows who made it
To be honest
What the hygiene lists can and can't do
We keep it simple on purpose: two lists and a PDF. So you know up front what you get:
What they can do
- Up to 20 cooling units: fridge, freezer, cold room and others, each with its highest temperature
- A cleaning checklist with up to 40 daily and weekly tasks, your own ones too
- Fix typos: every change is recorded in the settings under “Changes”
- Save too-warm readings only together with an action
- A monthly PDF for the health inspection, entries kept for 2 years
- Measuring in °F or °C
What they can't do
- No sensors: you read the thermometer yourself and type in the reading.
- No reminders: the app doesn't tell you on its own when a reading is missing.
- No signatures: instead, every entry has a name and time. Ask your health department whether that's enough for them.
- No other lists such as receiving, hot holding or pest control, and no templates of your own.
- No export other than the PDF.
Already using momoscreen for your café menu board or QR menu? Then just switch the hygiene lists on too. No second program, no second password, nothing to buy.
Allergens don't belong in these lists. For those, there's our free allergen chart to print out.
Background
What the health department expects
Short and calm: in the US, the food rules for restaurants come from your state and local health department. Those rules build on the FDA Food Code, a model code that states and local governments adopt. There is no single national form for a fridge log.
FDA Food Code 2026
The current edition is from 2026. Section 3-501.16(A)(2): food that needs time and temperature control for safety (TCS food) must be kept cold at 41 °F (5 °C) or below, the same as in the 2022 edition. Section 2-103.11(I): the person in charge makes sure of this through daily oversight of the employees' routine checks of food temperatures.

Your state and city
The Food Code is a model code: states and local governments adopt it as their own rules. It does not require a written fridge log for an ordinary restaurant. Whether your health department expects one, and in what form, it tells you itself, so ask them.

The hygiene lists are not an official form, and they don't replace a food safety plan or a HACCP plan: which risks your business has and where you check, you decide yourself, following your health department's rules. The lists are proof that you checked: when you measured, what was too warm, what you did about it and who cleaned. If in doubt, ask your local health department.

Questions
Common questions about the hygiene lists
What you want to know before you switch them on.
Is the PDF the official form for the health inspection?
There is no single required form in the US. The FDA Food Code doesn't ask an ordinary restaurant for a written fridge log; your state and local health department set the rules. The PDF is proof of your self-checks (the idea behind “HACCP”: know the risks and check regularly). Whether it's enough for you is up to your local health department. We can't guarantee that the inspector will be happy with it. If in doubt, ask them which checks you need to do.
What happens if a reading is too warm?
If a reading is above the highest temperature, the app shows a red note and asks what you did: adjusted the unit, moved the food, threw the food away, called a technician, or in your own words. Only then is it saved. The reading and the action are in the PDF under “Deviations and actions”.
Does the app remind me to measure?
No, there are no reminders; the app doesn't get in touch on its own. What helps: measure at the same time every day, for example when you open, and keep a phone or tablet in the kitchen. If a day does go missing, the calendar shows it in orange.
Do I need sensors or a special thermometer?
No. You read the thermometer in the unit and type in the reading. There are no sensors that measure on their own, and nothing to buy.
How long are the entries kept?
2 years, then the app deletes them. Want to keep a month longer? Download its PDF and file it.
Can I use °C instead of °F?
Yes. When you switch the lists on, you pick °F or °C. The suggested highest temperatures match, for example +7 °C for the fridge and −18 °C for the freezer; if a stricter value applies to you, such as 5 °C, change it. You can switch the unit later in the settings, and old readings are converted.
Does everyone on the team need their own login?
Anyone who should log needs their own momoscreen login with “Log hygiene” or “Manage hygiene”. That way every entry shows who made it. A shared tablet in the kitchen works too, but then every entry shows the name signed in on it. If your records should show who really measured, everyone needs their own login.
Are there lists for receiving, hot holding or pests too?
No. There are two lists: cooling units and cleaning. You can't create templates of your own, but you can add your own cleaning tasks. There are no signatures; every entry has a name and time. The only export is the PDF.
Can I get the lists on paper too?
Yes. For paper there's our free temperature log sheet with a cleaning checklist: the same columns and the same upper limits as in the app. You print it blank and fill it in with a pen.
What do the hygiene lists cost?
Nothing. The food temperature log and cleaning checklist are part of momoscreen and free like the rest of the app.
I only use momoscreen for my menu. Do I need to install anything?
No. The hygiene lists are in the same app. You switch them on, and the “Hygiene” menu item is there. If you don't need them, just leave them off.
Ditch the paper sheet
Switch on the hygiene lists and log your first reading tomorrow morning.
Free. No sensors, no tablet needed.
